Charcoal or Propane?
Grillmasters like to argue about which type of grill is best, but the truth is that both types of grills come with ups and downs. Which grill is right for you will depend on the kind of cooking you want to do:
- High heat direct radiation cooking, or searing. Often used for cooking steaks, searing meats requires placing them very close to the heat source for a short amount of time at very high heat.
- Indirect heat convection roasting. Often used for roasting chicken or rump roasts, this type of grilling requires the meat to be placed off to the side, and it is cooked by warm air circulating in a grill with the lid closed.
- Indirect heat smoke roasting. Often used in barbecue, this type of grilling works similarly to convection roasting, but with added heavy smoke.
Charcoal grills are typically better at producing extremely high heat, but high-end gas grills can achieve a good sear as well. With a propane grill, temperature is more consistent and easier to control, which is often better for indirect roasting. On the other hand, smoke roasting with charcoal produces a distinct smoky flavor that is often found in traditional Southern-style barbecue. Smoke roasting with propane produces a milder, less smoky flavor.
